Ginataang Kalabasa and Black Rice

Who would not love ginataang kalabasa and malunggay? It’s like a staple Filipino ulam and comfort food. I love the creaminess of the coconut milk and the sweet softness of kalabasa paired with the health benefits of malunggay — and of course black rice!

Not to mention how easy it is to make this.

For starters, cook black rice as instructed. I really try to soak it for one hour before cooking so that it will be soft once cooked. Next, sautee the meat in garlic. Add the butternut squash. Pour in gata and wait until the squash is soft. Add ginger. Then I usually add chili for good measure. 🙂

Serve hot!
